1 The Origin Story: Source Matters

- The Journey of the Drop: How catchment areas affect isotopic signatures.
- Terroir of the Aquifer: How geology (limestone, volcanic rock, glacial till) dictates flavor.
2 Technical Mineralogy (TDS)
- TDS Defined: Measuring Total Dissolved Solids and its impact on beverage "weight."
- The Big Seven: Understanding the palate impact of Calcium, Magnesium, Sodium, Potassium, Bicarbonate, Chloride, and Silica.
- pH Dynamics: How acidity vs. alkalinity changes the "sweetness" or "sharpness" of the water.
3 The Sensory Evaluation Method
- Visual Assessment: Brilliance, clarity, and bubble integration (for sparkling).
- Texture & Mouthfeel: Calibrating the tongue for "Slick," "Chalky," "Round," or "Sharp."
- The Finish: Identifying metallic, bitter, or clean exits on the palate.
4 Service & Stewardship
- Thermal Dynamics: Why specific mineral profiles require specific temperatures (e.g., higher TDS served slightly warmer).
- Vessel Selection: The impact of rim diameter on the perception of mineral salts.

Student Deliverable: The "Blind Three" Lab & Theory Exam
Students must perform a comparative tasting of three assigned waters from the list (e.g., Proud Source vs. Fiji vs. Hildon) AND pass a 50 question theory exam on the course curriculum.
- Task 1: Identify the samples based solely on mouthfeel and TDS perception.
- Task 2: Pass the 50 question theory exam with a score of 80% or higher.
Bonus Optional Integration: The "Whisky Dilution" Elective
Utilizing Level 1 knowledge to show how different TDS levels (Soft Scottish vs. Hard Limestone) unlock different aromatic esters in spirits.
