Level 2 Master Class
Sommelier of Water
For those seeking to curate at the highest echelons of Michelin-starred hospitality.
While Level 1 focuses on sensory calibration, Level 2 is the application of this science in world-class environments.
Master Class Modules
1 Epicurean Pairings
- Acid vs. Fat: Using high-bicarbonate boundaries to cut through rich sauces.
- The Canvas Effect: Using low-TDS "Virgin" waters to highlight delicate raw seafood (Sashimi/Crudo).
- Tannin Management: Preventing metallic reactions when pairing high-calcium water with heavy Red Wines.
2 Menu Architecture
- The Progression: Moving from light, still Spring water to robust, naturally sparkling effervescence alongside a tasting menu.
- Palate Cleansing: The precise moment to deploy a high-silica tasting to prevent "acid fatigue."
- Exercise: Mapping a 5-course menu with specific water transitions.
3 Water in the World of Spirits
- Dilution Science: How the TDS and pH of water change the "Bloom" of a spirit.
- Soft Water: Retaining the ester profile of Highland Scotch.
- Hard Water: Creating structure in high-proof Bourbon.
- Ice Program Management: The physics of clear ice, dilution rates, and the impact of mineral-rich ice on cocktails.
4 Gastronomy & The Culinary Interface
- Cooking with Mineral Water: How boiling vegetables in high-calcium water affects texture and color (the pectin bond).
- The Water Menu: Designing a profitable, diverse water program for a high-end restaurant or tasting room.
- The "Sommelier Walk": Table-side service techniques, temperature control, and storytelling.
5 Therapeutic & Medical Hydrology
- Balneotherapy vs. Ingestion: The history of European "Water Cures."
- Specific Health Benefits: Magnesium for stress, Bicarbonate for digestion, and Sodium for athletic recovery.
- Legal Standards: Navigating labeling laws, health claims, and sustainability (glass vs. plastic vs. local filtration).
Level 2 Practical Exam: The "Curation Challenge"
To graduate and enter the Gig Work Portal, students must successfully complete:
1. The Blind Calibration
Correctly identify 5 waters by TDS and Mineral Dominance.
2. The Spirit Bloom
Demonstrate the aromatic difference in a Cognac or Whisky when diluted with three different water profiles.
3. The Menu Pitch
Present a 3-course pairing logic for a specific restaurant client.
